Zucchini and Bacon Slice

Ingredients

6 eggs
1 large zucchini grated
1 carrot grated
1/2 onion finely diced
1/2 cup grated cheese
300g thinly sliced bacon
Pinch of baking powder
Salt and pepper to taste

Method

Beat the eggs in a large bowl then add salt, pepper and baking powder. Gently stir these ingredients together. Pour into a baking dish lined with baking paper for 25mins at 180 degrees.

This slice is great in lunch boxes. It holds its shape and holds stacks of nutrition as well.  This is one of my favorites.  I have lost count how much zucchini slice we ate while protesting in the freezing cold out side the gates of AGL's Frack farm at Gloucester NSW.   It kept us fed and happy.

POTATO GEMS

Ingredients

3 cups of mashed potatoes
2 eggs
1/3 cup Sour Cream
1  cup grated Cheese
2 tablespoons grated Parmesan Cheese
2 tablespoons chopped Chives or Parsley
Salt and black Pepper


 

 

Directions

1. Preheat oven to 200 degrees Celsius
2. Grease non stick muffin pan with butter or oil
3. In a  mixing bowl whisk the eggs.
4. Mix in sour cream.
5. Stir in both cheeses and the chives.
6. Add mashed potato and mix through well.
7. Spoon into pan  slightly below the tops.
8. Bake 25- 35 minutes until they pull away from the side of the pan and golden in colour
9. Remove from oven leaving in the pan to cool for approx five minutes.

BROWNIES with YUMMY ICING ON TOP

BROWNIES INGREDIENTS:

1 cup butter, cubed
3/4 cup baking cocoa
4 eggs
2 cups sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon salt
2 cups (12 ounces) semisweet chocolate chips
1 cup chopped nuts, optional

FROSTING INGREDIENTS:

 4 ounces cream cheese, softened
1-1/2 cups cold 2% milk, divided
1 package (3.4 ounces) instant vanilla pudding mix
1/8 teaspoon almond extract
1-1/2 cups whipped topping
 Chocolate curls optional decorations

METHOD:

  1. In a small saucepan, melt butter; stir in cocoa until smooth. Remove from the heat. In a large bowl, beat the eggs, sugar and vanilla for 1 minute. Gradually add flour and salt. Stir in cocoa mixture. Fold in chocolate chips and, if desired, nuts.
  2. Pour into a greased 13-in. x 9-in. baking dish. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out with moist crumbs (do not overbake). Cool on a wire rack.
  3. In a large bowl, beat cream cheese and 1/2 cup milk until smooth. Add pudding mix and remaining milk; beat for 2 minutes or until thickened. Stir in extract; fold in whipped topping. Spread over cooled brownies. Refrigerate until set.
  4. Makes approximately 30 Brownies.

ZUCCHINI SLICE

Ingredients

2 zucchini, grated
1 large onion finely chopped
3 rashers bacon finely chopped
1 cup tasty cheese grated
1 cup self-raising flour
½ cup of oil
5 eggs
Salt an Pepper

Method

Preheat oven to 170°C. 

Grease and line a non-stick Lamington tin.
Combine zucchini, onion, bacon, flour and cheese in a large bowl.  Add oil and lightly beaten eggs, and mix.  Season with a little salt and pepper. 
Pour into lamington tin.
Bake for 35-40 mins until golden and set. 
Allow to cool slightly before cutting.
Note: Use what vegetables you have on hand and add or substitute  – try corn kernels, grated carrot, shallots, shredded beans, and leave out the bacon for a vegetarian version.

CHOCOLATE CHEESECAKE BROWNIE SLICE

This is a rich and luxurious slice that will simply melt in your mouth and is relatively easy to make, it just takes a little organization ahead of time to get the cream cheese soft to start.

INGREDIENTS:

BROWNIE
1 Cup Plain Flour
1 Cup Castor Sugar
1/4 Cup Cocoa
2 Eggs
170 g Butter
100 g Dark Chocolate

CHEESECAKE

285g Cream Cheese Softened
5 Tablespoons Castor Sugar
2 Eggs
1 Teaspoon Vanilla
100g white chocolate chips optional

METHOD

Preheat oven to 160 degrees Centigrade
BROWNIE : Melt  butter and chocolate together
Combine flour, sugar and cocoa add eggs and melted butter and mix together.
CHEESECAKE: Process Cream Cheese, sugar eggs and vanilla until smooth. Add chocolate chips if using these.
In a lined slice tin, dollop brownie mixture and cheesecake mixture alternatively.
Using a knife drag through mixture to create a marbled effect
Bake at 160 degrees Centigrade for 45 to 50 minutes or until set.  Best served chilled to achieve the best effect for your benefit as far as taste goes.

LEMON CONDENSED MILK SLICE (no cooking)

 INGREDIENTS
1 pkt Marie Biscuits
1/2  can Condensed Milk
125 grams melted butter
3/4 cup Coconut
1 Lemon
Icing
2 Cups Icing Sugar
1 - 1 and a 1/2 tablespoons butter
Lemon Juice

 METHOD
1. Crush biscuits and mix in coconut
2. Add finely grated lemon rind and mix
3. Combine melted butter and Condensed Milk and stir in well
4. Press into a lined Slice tin and refrigerate to set.
5. Icing: Mix all icing ingredients and ice when cool

RASPBERRY COCONUT SLICE

When I was a child this recipe was converted to Blackberry Coconut Slice.  Blackberries grew everywhere when I was little and we would go out to the bush and collect them in buckets.  I'd get scratched to pieces doing this and get red stain on me because I ate more than I collected. 

But it was fun.  These days the blackberry briar's in the wild are poisoned by councils so its not a great idea to try to consume them any more.  Raspberry Jam is still one of the cheapest to purchase and it doesn't have to be the top label jam when using it in combination like in the recipe below.

Ingredients:

BASE
1 Cup Self Raising Flour
1/3 Cup Castor Sugar
1/4 Cup Coconut
125 grams butter (melted)
TOPPING
1 Cup of Coconut
1/4 Cup Castor Sugar
1 Tablespoon Corn Flour
1 Egg lightly beaten
1/4  Cup of Raspberry Jam

Method:

 MAKING THE BASE

1.  Sift Flour into a bowl
2.  Add Sugar and coconut
3. Mix in butter
4.  Press into a tin and bake in a moderate oven for 15 minutes
5.  Cool and spread Raspberry Jam all over

MAKING THE TOPPING

1.  In a bowl mix together Coconut Sugar and Cornflour
2.  Beat and Egg and mix into this mixture
3   Spread on top of  jam covered base
4.  Bake in a moderate oven for  20 minutes
5.  When slightly cool cut into slices
