1 kg of Sifted Icing Sugar
500 grams desiccated coconut
2 teaspoons vanilla
1 x 400 gram tin of condensed milk
2 x egg whites
60 grams Copha shortening
cochineal pink colouring
Method:
- Combine Icing Sugar and coconut in a bowl.
- Melt copha.... and line a lamington tin with aluminium foil
- Add Vanilla, condensed milk, egg whites and melted copha.
- Combine this mixture well and separate into two separate lots.
- In one lot, add a few drops of cochineal and colour pink.
- Press Pink lot into the bottom of a foil lined 18 x 28 cm Lamington Tin.
- Place in the fridge for a few minutes to start the chill process.
- Take out and press on top the white section and return to the refrigerator to set harder.
- When sufficiently set turn out and cut into convenient squares for consumption.
